Seasonal vegetable pickles.
Ingredients are cucumber, radish, carrot, and raw pumpkin "Korinky".
The pickles have a nice texture, a moderate acidity, and a dashi (Japanese soup stock) flavor, and can be served just like pickles.
A rare summer vegetable, "Korinky" has a nice crunchy texture, similar to that of persimmons.
It has none of the unique greenish taste of pumpkin, making it perfect for salads!
When pickled, its sweetness is brought out like a textured fruit.
Rich in beta-carotene, it has anti-aging and detoxifying effects, and is also rich in vitamins B1 and B2, which support the workings of metabolism♪

We recommend chirashi-zushi, a dish of pickles and pickle juice mixed with rice!
